Ours have a combined wealth of hospitality experience – mixed with a younger energy that keeps us curious, eager and always trying to do things better. Mostly, we’re just proud to look after this storied pub and the people who walk through the door.

Housekeeping

Rachel
Restaurant Supervisor
Rachel has been with us since 2019, overseeing countless services since then – she now splits her time between Thorney and Witham on the Hill. Rachel enjoys the garden, as well as spending time with sons Joe & George. She can take most of the credit for both pubs always looking fresh – and in the summer months her unofficial role is dead-header in chief.

Aoife
Sunday restaurant supervisor.
Aoife was another new hire in summer 2025 upon the Rose and Crown opening. She worked full-time until the close of the year, cutting her teeth as restaurant manager – before reducing her hours to accommodate studying for a masters in speech and language therapy, at Lincoln University. Aoife now runs the show on a Sunday and in her limited free time enjoys baking, knitting, a good book and a long walk.

Vicky
Head of housekeeping
Vicky rejoined our team in May 2025 after a couple of years away, having previously worked with us from 2017-‘19. In her new role Vicky oversees a team of housekeepers and is responsible for keeping our fourteen guest bedrooms across both pubs tip-top – and the public areas maintained. When not working at Witham or Thorney, Vicky follows Arsenal FC ladies – and enjoys spending time with children Coby, Logan and Joshua.

Lauren
CFO
Lauren was raised in the business and has over twenty years experience in hospitality. Under her tenure, the Beehive quickly became a Peterborough institution and remained so for a decade. These days Lauren makes the place tick behind the scenes – handling accounts, payroll and most of the administration across both pubs. She enjoys the theatre & spending time with her children, Bonnie and Jed.

Nathan
Head Chef
Nathan has been cooking professionally for over a decade and has been a part of our team since June 2019. His calm demeanour and ever-growing skillset quickly propelled him to Junior Sous chef at the Six Bells. A position he shined in for several years, before making the move across to the fens and up to the pass. Nathan is passionate about Neapolitan pizzas and his favourite produce to work with is small-boat-caught fish. Nath has a daughter called Mayah, and in his downtime he enjoys (not always) watching Leeds United.

Sophie
Operations Manager
Sophie has been with us since February 2022 and has had a meteoric rise within the business. Starting as a part-time waitress outside of school hours, she was very quickly entrusted with more responsibility. After her A-levels, Sophie came on board full time as the Maitr’d at the Six Bells and established herself as a key member of the management team. Sophie now splits her time between Witham and Thorney, supporting management across both sites, and co-ordinating administrative duties. She is into fashion, and enjoys shopping & socialising with friends and family.

Laura
Restaurant manager
Laura joined the team in July 2022 – bringing oodles of management experience from her previous fourteen years in the hospitality industry. Laura has been at the Rose & Crown since we set sail in May 2025 and accepted a promotion to the role of Maitr’d in January ’26. When not in Thorney, or with children Loucie & Jaxson – Laura is a foodie who loves to dine out.

Adam
Sous Chef
Adam joined the team in early 2025 as we finalised our plans to expand to the Rose & Crown. Another long-suffering Leeds United fan, and the only chef with a calmer demeanour than Nathan. He has been our sous chef from the outset. Adam’s favourite produce to work with is local game. He enjoys handling local deer, honing his butchery skills – as well as baking breads at the pub and at home.

Grace
Restaurant supervisor
Grace came aboard in summer 2025, and has been at the Rose & Crown from day one. She steadily grew into a leadership role and took on more responsibility. Grace fills her time working at the pub, studying psychology at the University of Birmingham, riding horses, keeping fit, and maintaining an active social life.

James
CEO
Like Lauren, James was raised in the business and has worked in it since he was a teenager. He spent five years in the American midwest, studying economics at St Ambrose University before working at Chicago’s multi-Michelin starred Alinea group. James enjoys running, hiking, photography and watching Peterborough United. He can be found on either restaurant floor – or at james@sixbellswitham.com
